Sweet Memories: Baking Jacobs Camp Signature Cookies with Taste of Camp

What’s better than summer camp? Summer camp with cookies! This week, Taste of Camp got an extra special treat thanks to their amazing Unit Head, Paige Mandelman. Paige shared her famous cookie recipe with the campers—and let’s just say, it was an instant hit.
The excitement started in the test kitchen, where campers rolled up their sleeves and got to work. The smell of warm cookies filled the air, and the laughter was just as sweet as the dough. Of course, everyone had strong feelings about how many cookies were enough. When we asked the girls how much they loved the cookies, Elizabeth shouted she wanted ten! Not to be outdone, Ava quickly responded, “I want twenty!” The girls all agreed that one cookie just wasn’t going to cut it.
We also caught up with some of the boys, who had their own cookie dreams. Oscar told us he couldn’t wait to bring the recipe home. “The first thing I’m going to do when I get home is give my mom the recipe,” he said. “I want her to make the cookies while I sit on the couch and watch TV.” Classic. Meanwhile, Lavi had a unique take—he loved the dough so much, he said he’d skip the chocolate chips altogether!
But cookie-making was just part of the fun. Whether it’s baking together, sharing stories, or sneaking a second (or third!) cookie, Taste of Camp is full of sweet moments that campers will never forget.

Jacobs Camp Signature Chocolate Chip Cookies
Recipe By Paige Mandelman
Ingredients
- 2 ½ cups of all purpose flour
- 1 tsp of baking soda
- ½ tsp of salt
- 1 cup of butter, softened
- ¾ cup of granulated sugar
- ¾ cup of packed brown sugar
- 1 egg
- 1 Tsp of vanilla
- 2 cups of milk chocolate chunks
- Mixer
Directions
Step 1: Preheat oven to 350
Step 2: In a small bowl, mix flour, baking soda & salt. Set aside
Step 3: In a large bowl, beat softened butter and sugars until fluffy and fully combined
Step 4: In the large bowl, beat in egg & vanilla until smooth
Step 5: Stir in flour mixture until blended (Note: dough will be stiff.)
Step 6: Stir in chocolate chips
Step 7: Spoon onto cookie sheet & bake at 350 for 8-10 mins
Note 1: You can pre-spoon the dough and store in a container or bag for homemade “break and bake” later
Note 2: Dough keeps fresh in fridge for 2 weeks or in freezer for 6 months
Note 3: Chilling the dough (at least 30 min) before baking is nice to have but not necessary
